Hey all,
I think i said this is going to be tough a few times now already. Well I'm going to sat it again....AAAARRRGGG! Last night no one was around for dinner, one of those family fend for yourself nights and I had a difficult time with what to eat. We haven't done groceries yet based on next weeks schedule, so we only have what we regularly would have in the house-JUNK! We aren't going to do the shopping till Sunday for the upcoming week because my wife has other plans this weekend. I know I could do it myself but if I do it alone I will never get the family all thinking about what we truly eat and how to improve it. Besides my wife is usually the one to do the shopping anyways and if she is not on board with me I fear I will be doomed to fail, again. Maybe we should take on the European mode for shopping. You know get ride of the large refrigerator in the kitchen and get just a small little thing. That way we keep only the absolute minimum in the fridge and shop daily for fresh product. If i am being realistic I don't think that would work at all, not with a family of five.
Well anyway, I did find in the freezer some frozen "French Onion Soup" to eat. I don't know the nutritional content of the soup because to get everything in the freezer we need to open all the boxes and throw them out. This is going to be something else we need to change. Additionally I had 9 mini "Pizza Bagels". God only knows how bad that **it is for you. I told you I had a bad night last night. To make things worse around 11:30 p.m. I had such a craving. I could have eaten a small child if they were covered in chocolate. I did stave off the temptation with a small serving of macaroni salad and a glass of orange juice. The salad was really good and it had no mayo in it at all. It was made with olive oil, spices and small bits of carrot. Needless to say I was surprised as I normally like macaroni salad with lots of mayo, Italian dressing and chunks of cheese not carrots.
So that was last night and this is today and today I started out o.k.. I had a glass of O.J. and 2 pieces of whole wheat toast with peanut butter. Tonight no one is around again but this time i know it in advance and I can start early preparing what I might want to eat. I think I might go for this "Baked Macaroni and Cheese" recipe I found on SparkPeople.com. I'll let you all know how it was tomorrow.
