So last night I started working with the program from PeopleSpark.com before starting full this Sunday.
I have to say it is going to be something to get accustomed too writing everything down on a daily basis. Even if it is on a website, but I guess I have set myself up for this just by starting this blog.Working with each tool doesn't take much to get accustomed too. What is going to be the real challenge is working with everyone in the house. I have tried dieting before with little to no success. Living in a house with 5 people who all have different eating habits can be a challenge to both the chef of the house and the family budget.
The kids eat like one person, my daughter (21) says she is now a vegetarian, although she only eats about 3 vegetables, some potatoes, rice and of course junk food.
My son (17) refuses to eat any vegetables at all, so he often sits at the table with just a plate of meat, covered in ketchup. It appears that we have really screwed up the kids eating habits pretty bad.
My wife and mother-in law will pretty much eat anything in front of them but they do have some of there own food issues. My wife usually doesn't eat much during the day at all and then tends to over eat a dinner and snack on junk the rest on the night.
The mother-in law is from a different time. A time where every-night has to be meat and potatoes with a veg and she really doesn't like the variety of foods available, although she will eat it.
Me, I have issues. I have "I.B.S." and have had "Diverticulosis" in the past. Resulting in two surgeries that have removed sections of my large intestine. Needless to say there are things that I can't eat and things that I need to eat. Like no broccoli, cabbage, etc. and the need for a high fiber diet.
WOW, when you put it all down on paper it's obvious why this has not been easy before. Too many things to consider. However there is no choice, I if don't get control of this now, I never will and that will eventually be the end of me.
I need to get everyone thinking about how they eat and get them all on the same page. If I can do this then it will certainly be easier to make 1 meal a night and reduce the families food budget considerably. If anyone has any suggestion on how to accomplish this task, I am listening and looking for your comments. I need to get this process started by Sunday, so that I can keep on track.
By the way; yesterday I took a brisk 20 min walk, my first in months and tried a recipe last night from the PeopleSpark.com site and it was fantastic. I could eat like this all the time. I just have to share this one with all of you even before I get started. It was so easy too.
Mexican Chicken Breast with Spanish Rice (290 calories total)
You need:
4 oz of chicken per serving
1 packet of Taco seasoning
1 cup of Salsa (mild to hot)
1/4 cup low fat sour cream
- Place the chicken in a large Zip Lock bag with the Taco Seasoning and shake vigorously, making sure the chicken is fully coated.
- Place the chicken in a casaroll dish sprayed with Pam
- Place in oven (375) for 30 to 60 min (depending upon chicken thickness)
- 5 minutes before it is ready place the 1 cup of Salsa over the chicken
- Serve 4 oz piece per person and top with sour cream
I just used the Zataran's Spanish Rice and followed directions (130 calories per serving)
